É de todas as operações vitícolas, a que exige maior cuidado, maior inteligência e maior aptidão da parte do trabalhador rural. Muitos são os processos de poda em uso, tanto no nosso país como fora dele; adoptando-se nas várias regiões aqueles que melhores resultados práticos produzam. Alguns sistemas de poda têm sido ultimamente inventados no estrangeiro, dizendo deles maravilhas os seus autores. Aconselhamos os proprietários inovadores a usá-los, como experiência, pondo-os em prática, apenas quando bem certos dos seus bons resultados. Nisto como em muitas outras coisas agrícolas, preferimos os usos antigos, porque, como bem diz o chorado mestre Ferreira Lapa— «tudo quanto em agricultura tem séculos de existência tem razão de ser». \r\nAntes do míldio ter sido introduzido na Europa, punham-se os vinhos em limpo no mês de Março, e muitas vezes também no mês de Abril: hoje esta operação vinícola tem de ser feita muito mais cedo (fins de Dezembro e começo de Janeiro), porque os gérmenes do míldio trazidos para o lagar nos bagos e engaços de uva, promovem a alteração do vinho logo após, a fermentação tumultuosa.
