Note that facsimiles or images of texts are still of the genre Text."],["elementContainer",["element",{"elementId":"1"},["name","Text"],["description","Any textual data included in the document"],["elementTextContainer",["elementText",{"elementTextId":"7829"},["text","O que é preciso fazer para produzir bons vinhos? \r\nPondo de parte os cuidados culturais como as podas bem conduzidas e em épocas convenientes, empas cuidadas, cavas e descavas a tempo, aplicações oportunas de enxofre moído, simples ou cúprico da calda bordelesa e de outros preparados para defender a cepa dos parasitas e doenças, deve-se tratar, em primeiro lugar, de regularizar ou uniformizar a maturação desparrando ou esfolhando certas castas de vinha mais serôdias, e cobrindo com fetos ou ervas secas outras mais temporãs. \r\nDepois deve preocupar o viticultor o momento da vindima, não convindo antecipá-la , pois se perde álcool e corpo, mas sendo em muitos casos prejudicial retarda-la, pois só se pode ganhar álcool , dificultando-se o trabalho da vinificação e prejudicando-se às vezes com a demora de vinho a fabricar. \r\nA limpeza da adega, do vasilhame e de todos os utensílios deve também merecer o maior cuidado, começando pelos cestos e dornas para onde a uva é colhida e acabando no próprio pavimento da adega. \r\nOs bolores, o bafio, a azedia, a podridão parte muitas vezes da vasilha e utensílios abandonados sem cuidado em adegas húmidas e mal cuidadas. \r\nA casse ou enferrujação, a azedia e a tolda, encontram nas más condições da vinificação as suas principais causas. Em geral pode dizer-se que uma vindima feita no tempo próprio, com escolha da uva se tiver muito podre ou muito seco, ou sem escolha se for sã, feita para cestos e dornas bem lavados e sãos, para balseiros ou lagares convenientemente preparados, produzirá vinho bom e de segura conservação. Deve evitar-se porém que as fermentações se façam muito rápidas elevando-se demasiado a temperatura dos mostos. Neste caso pode fazer-se circular o mosto tirando-o pela torneira de baixo do balseiro ou tonel de fermentação e deitando-o por cima. Este trabalho dá em geral mais corpo e mais cor aos vinhos tintos. \r\nO fim da fermentação deve também ser verificado pelo pesa-mostos, ou mustímetro, que indica bem quando o açúcar está todo desdobrado e portanto a ocasião de o separar dos engaços e bagulho, envasilhando-o para a fermentação lenta O mustímetro pesa-mostos é hoje um aparelho indispensável em todas as adegas.\r\nA fermentação lenta deve também ser vigiada e feitos os atestos logo que seja possível e preservado o novo vinho do contacto com o ar.\r\nSó para os vinhos especiais se usam processos fora do comum, porque para obter bom vinho não é preciso nada especial — boas uvas, asseio, cuidado na determinação do momento do encuvar evitando temperaturas elevadas na fermentação ou que o vinho arrefeça nas balsas.
